After harvest, ripe coffee cherries are selected, pulped, and fermented in water to remove the remaining fruit layers. The beans are then washed and carefully dried, creating a coffee with remarkable clarity and balance.

The process begins with carefully sorting freshly harvested cherries. Using water tanks, only the ripest and healthiest cherries are selected, ensuring the highest quality beans move forward for processing.

The selected cherries pass through a pulping machine that removes the outer skin and fruit. The beans remain covered by a thin layer of mucilage, ready for the next stage of processing.

The beans are traditionally fermented in water, allowing naturally occurring microorganisms to gently break down the mucilage. This careful process helps develop clarity, balance, and the distinctive flavors of the coffee.

After washing, the beans undergo meticulous hand-sorting to carefully remove any defects. The selected beans are then sun-dried on traditional African raised beds, preserving the coffee’s clarity, quality, and unique character.
